Updated Parallels to version 10.2.0 (28956) and also changed VM settings to 1 Processor and only 4 GB RAM, and the problems seem to have gone away. Tried making the suggested mouse option changes (Optimize / No Optimize for games, scroll options, etc) as listed above. 11 Crash Immediately After Loading Skyrim.
